Studies have shown that the polyphenols found in EVOO have anti-inflammatory properties and therapeutic effects against chronic diseases such as cardiovascular disease, diabetes, neurodegenerative disorders and cancer. We harvest early to maximise the polyphenol count.

Koroneiki Variety

Rich in polyphenols (natural antioxidants) the tiny but mighty Koroneiki variety produces a golden-green olive oil distinguished for its health and nutritional benefits. With 543 mg/kg our oil has more than double the standard set by the EU to be considered “high polyphenol”.

Exceptional Quality

We take great care during the harvest to avoid damaging the olives and we cold press them at the mill within 24 hours. This preserves quality, flavour and nutritional content. Acidity is actually a measure of the % of free fatty acids in the oil which show the quality of the fruit that was used to produce the oil. Low values are indications of healthy fruit, clean harvesting methods, and a short time period between harvest and processing.

Pure and Unadulterated

The olive mill we collaborate with is organic certified and uses state of the art techology. The purity of our oil can be understood from the K-factors and DK oxidation levels (which measure contaminations, adulterations or modifications) and the perioxide value (which measures quality of the production – temperature and processing time).
